Ponceau 4R and Unicert dyes are hydrosoluble dyes providing the color and the staining effect. Covabsorb DS protects the dyes from fading. Adjust the dyes to get the shade you want. Covasilic 15, a fumed-treated silica, increases the consistency of the formula to give this frozen gelato texture.
